豬扒就要多D前戲,醃個時幫佢按摩下,全範圍搵玩具(刀背)DUP下骨先。 煎就留意顏色,任你反轉,轉任可體位也可,見到皮膚金黃色就得,留意唔好過熟

牛扒就最緊要煎完要休息,先唔會切出黎好多血水。牛扒好多人話唔鐘意轉體位既(即係唔好成日反轉塊扒)我就覺得無所謂,舒服就得。 講究D,出埋探熱針

雞扒我就覺得焗最好食,最JUICY。同埋焗會好脆皮,合埋眼焗佢30分鐘+都唔會炒粉。我覺得焗爐唔會咁易OVERCOOK

塊扒大小都好影響煎幾耐,呢樣野就講經驗喇

有冇心得分享?

keep住大火、燒紅個pan
冷凍狀態牛扒的話要薄身、最厚2cm。否則必須解凍。
冷凍的話、每邊45秒、一路燒底、面就撒鹽同黑椒。45秒後重複、最好45再反一次燒多30秒、再反又30秒、完成。
如果解凍後、就45秒改成30秒、30秒改成20秒。

出pan後擺返2-3分鐘先切黎食、因為入面仲煮緊。

以上為3-5成熟做法。想熟d就各加多15秒

咁聽話、keep住猛火、燒到個pan紅曬先擺舊肉。
唔計時都得、見到個面就黎膿就反轉。一定無錯
